# Directions:

01 - Spread 1/2 tbsp of softened butter evenly on one side of each bread slice.
02 - Place two bread slices buttered side down on a clean surface. Spread 1 tbsp of basil pesto on the unbuttered side of each slice.
03 - Distribute fresh mozzarella slices over the pesto, then arrange tomato rounds on top. Lightly season tomatoes with salt and freshly ground black pepper.
04 - Top each sandwich with the remaining bread slices, ensuring the buttered side faces outward.
05 - Preheat a nonstick skillet or griddle over medium heat.
06 - Place sandwiches in the heated skillet. Cook for 3-4 minutes until the bread achieves golden brown color and crispy texture.
07 - Carefully flip sandwiches and continue cooking for an additional 3-4 minutes until the second side is golden and the cheese is fully melted.
08 - Remove sandwiches from heat and allow to rest for 1-2 minutes. Slice each sandwich diagonally in half and garnish with fresh basil leaves if desired.

# Expert Tips:

01 -
  • The way the pesto seeps into the bread while it grills creates these incredible crispy, herb flecked edges that are honestly addictive
  • Its the perfect bridge between a fancy Italian panini and the comfort food you crave on rainy Tuesday nights
02 -
  • Medium heat is your friend, high heat burns the bread before the cheese has time to melt
  • A splatter screen or lid slightly ajar helps the cheese melt without drying out the bread
03 -
  • Grate a little parmesan over the buttered side before grilling for extra crispy, cheesy bread
  • If your pesto is thick, thin it with a teaspoon of olive oil for easier spreading
