Tortilla filled with fluffy eggs, crispy potatoes, cheese, and bacon or sausage for a hearty start.

# Ingredient List:

→ Proteins

01 - 4 large eggs
02 - 4 slices bacon or 4 breakfast sausages

→ Vegetables

03 - 2 medium potatoes, peeled and diced
04 - 1 small onion, finely chopped
05 - 1 small bell pepper, diced

→ Dairy

06 - 1 cup shredded cheddar cheese (4 oz)
07 - 2 tablespoons milk

→ Tortillas

08 - 4 large flour tortillas (10 inches)

→ Spices & Oils

09 - 2 tablespoons vegetable oil
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - 1/4 teaspoon smoked paprika (optional)

# Directions:

01 - In a skillet over medium heat, cook bacon or breakfast sausages until browned and fully cooked. Remove, drain on paper towels, and chop into bite-sized pieces.
02 - Using the same skillet, add 1 tablespoon vegetable oil. Sauté diced potatoes, chopped onion, and bell pepper with salt, black pepper, and smoked paprika (if using) until vegetables are golden and tender, approximately 10 minutes. Remove and set aside.
03 - In a bowl, whisk together eggs, milk, salt, and black pepper. Heat the remaining 1 tablespoon vegetable oil in a non-stick pan over medium heat. Pour in the egg mixture and gently scramble until just set.
04 - Heat tortillas in a dry skillet or microwave for about 20 seconds until warm and pliable.
05 - On each tortilla, place one quarter of the sautéed potatoes and vegetables, scrambled eggs, cooked bacon or sausage, and shredded cheddar cheese in the center.
06 - Fold in the sides of each tortilla and roll tightly to enclose the filling fully.
07 - Optionally, grill the burritos seam-side down in a dry skillet over medium heat for 2 minutes to crisp the exterior and seal the edges.
08 - Serve immediately while hot, accompanied by salsa or hot sauce if desired.

# Expert Tips:

01 -
  • It comes together in under 35 minutes but feels like you've made something impressive.
  • You can prep components the night before and assemble in the morning when you're half asleep.
  • One burrito holds enough protein and carbs to actually keep you full until lunch.
02 -
  • Eggs curdle if your pan is too hot—medium heat is your friend, and you stop stirring before they look fully set.
  • Wet potatoes won't crisp; pat them dry after dicing and don't crowd the pan so they actually make contact with the heat.
03 -
  • Cook everything in the same skillet in sequence so the flavors layer—don't wash between steps.
  • If a tortilla splits while rolling, use it as your base layer and wrap the whole thing in a second tortilla for extra security.
