# Directions:
01 - In a skillet over medium heat, cook bacon or breakfast sausages until browned and fully cooked. Remove, drain on paper towels, and chop into bite-sized pieces.
02 - Using the same skillet, add 1 tablespoon vegetable oil. Sauté diced potatoes, chopped onion, and bell pepper with salt, black pepper, and smoked paprika (if using) until vegetables are golden and tender, approximately 10 minutes. Remove and set aside.
03 - In a bowl, whisk together eggs, milk, salt, and black pepper. Heat the remaining 1 tablespoon vegetable oil in a non-stick pan over medium heat. Pour in the egg mixture and gently scramble until just set.
04 - Heat tortillas in a dry skillet or microwave for about 20 seconds until warm and pliable.
05 - On each tortilla, place one quarter of the sautéed potatoes and vegetables, scrambled eggs, cooked bacon or sausage, and shredded cheddar cheese in the center.
